This is one of those days when I feel like eating something sweet (and baking of course) but not in the mood to make something too complicated. Only want to make something very quick, easy and simple.

Fortunately I have some mini tart cases left. And I found my homemade puff pastry dough in the freezer. Immediately I thought of thick custard / pastry cream to go with them. But Just plain pastry cream would be a bit boring. So I decided to add some chocolate to it.

What I did was, make a plain pastry cream and then while it’s still warm, I added some chocolate buttons into it. And mix everything together. Let it sit in the fridge to cool it down.

And in the mean time, I whip some thick cream. And when the pastry cream is cold enough, I mix them together. The whipped cream made the pastry cream very light and fluffy.

You can also use custard powder. Whipped cream with some nutella also works.

I know today’s post isn’t very informative. But I hope at least it gave you some ideas when you’re having days when you feel like baking but doesn’t want or don’t have time to make something complicated. Because you can bake the cases at least 2 days before you use them. Just make sure to store them well.
