Corn Pancake and Spiced Toasted Coconut

Last weekend was very nice for me. We spent 2 night at my husband’s grandmother’s place. Fortunately 1 of my good friend (my very first friend I met here in Sweden) lives in the same city. We’ve planned to have lunch together to celebrate the right recipe of empek-empek for me. So I made some for her and she made bakso (Indonesian style meatballs). Both of those meals are my favourite. I’ll try to make them again some other time and share the recipes with you πŸ™‚

The continuation of previous post about Eid celebration, there 2 side dishes in this post. Corn pancake and spiced toasted coconut.

Lets check corn pancake first. You’ll need:

1 canned sweet corn

3 tbsp AP flour

1 clove of garlic or 1/2 tsp garlic powder

1 sliced spring onion

1 egg

salt and pepper

 

How to:

– Mix all ingredients in a bowl. Add a bit water at the time until you reach thick consistency.

– In a sauce pan, with hot oil, take 1 tbsp of mix and deep fry each side around 2 to 3 minutes or until golden colour.

– Done!

What an easy pancake recipe, don’t you think? It can be a good side dish too. Or even just for snack, only need chili sauce to dip it in πŸ™‚

 

Now is the coconut one.

You’ll need:

dried coconut, tamarind paste, ground coriander, 2 cloves of garlic, 1 banana shallot, line leaves, salt and pepper.

 

How to:

– Blitz garlic, shallot, coriander, and tamarind paste.

– In a sauce pan (no oil) toasted coconut until brown colour, add the paste mix and little bit oil, add lime leaves, salt and pepper to taste.

– Done!

Another easy recipe of side dish. With no much work, you already can have 2 yummy side dishes to go with your rice cake.

    In \india, we have almost same dish, made out of onions, indian parsley etc.. we call it bajji:):)

        normally it is paired up with tomato ketchup (kids will love it) and pudina(mint) chutney. drooll…:):) i want it now:):):)

        yup perfect..!! esp when u are bored of those all time fav like samoosas,cutlet,spring rolls.. also.. if your lazy to cook..!! this is very easy to go..:):)
