Gnocchi Gratin

On busy days I like to make whatever-I-can-find-in-the-fridge stir-fry or something that I can easily put together and oven do the rest of the work (so I can do something else, while the food cooking it self :P) And this is one of them.

When husband working late and I’ve had a busy day, I usually a bit stressed when it comes to dinner. I don’t like buying ready food so much (expensive and not many to choose from) and the last choice is instant noodle (most of the time). But I know it’s not good, especially for my daughter. Then I got ever more stress πŸ˜›

My daughter likes gnocchi. So I thought I should try making gnocchi gratin, since it’s pretty easy.Β I served this with some beef sausages and quick mixed salad.

As for the picture, I took it my self because husband was working late, that’s why it doesn’t look very good πŸ˜›

Ingredients:

  • 1 pack gnocchi (500g)
  • 200g ricotta cheese
  • 100g creme fraiche
  • 1 tsp oregano
  • 100ml milk
  • cheddar cheese
  • salt & pepper

 

How to:

  1. Boil the gnocchi for 3 to 5 minutes or just follow the instruction in the packaging.
  2. Add ricotta, creme fraiche, oregano, milk, salt and pepper. Mix well.
  3. Transfer into baking pan (over proof pan) and sprinkle cheddar cheese on top.
  4. Bake until the cheese is nice and golden brown (mine is over baked :P).
