Hainan Chicken Rice

Hainan chicken

I have lots of friends who like to post food photos on their facebook (mostly Indonesian foods) and always success at making me hungry and drooling. And this recipe is one of the result of looking at those food pictures.

I’ve been living in Singapore for 6 months before, but I’ve never tried this food even once. And when I saw one of my friend posting this food picture in her facebook, I suddenly crave for it too. I looked so nice and simple. And I knew I have to make it sometime soon.

I’m sure I can find this too in Indonesia, but not in my hometown. At least I think so.

The recipe only use few simple ingredients. And it is soooo easy to make. I promise. Although the recipe looks very long and complicated, but don’t worry. It worth to try 🙂

It was really nice. I liked it a lot. The broth is nice, clear and light. Not much going on in your mouth. Sometimes less is more… hehehe 😀


For the chicken

1kg chicken thighs (you can use whole chicken too if you have big pot)

1 onion, roughly chopped

2 stalks celery, cut

2 garlic cloves, crushed

1 cm fresh ginger, crushed


How to:

Place all the ingredients in a large pot, pour some water (enough to cover the chicken).

Bring it to the boil then simmer for 10 to 15 minutes. If you using whole chicken, simmer for at least 20 minutes.

Let it cool down, take the chicken out and strain the stock.


For the rice

2 cups rice

half of the chicken stock


How to:

If you’re using rice cooker, place all the ingredients in it. And let it cook by it self (easy).

If you’re using pot, bring it to the boil until all the water almost evaporated and turn off the stove. Cover the pot with a lid and let it steam by it self for at least 7 minutes.

For the broth

half of the chicken stock

2 stalks spring onion, sliced (for serving)

For the ginger chili sauce

1 small red onion, chopped

1 cm fresh ginger

5 bird eye chillies (adjust to your taste)

1 tsp rice vinegar / lemon juice

sugar & salt

How to:

Put all the ingredients in a food processor. Pulse several times.

In a small pot, let it simmer for 5 minutes. Taste.



Serve the rice and a piece of chicken on a plate. Serve with the broth in a separate bowl, sprinkle with some sliced spring onion. And ginger chili sauce.
