Potato Croquettes

A very short post today. This is another proof that I’m a lazy cook. Actually I wanted to make risoles when I made the filling for this croquette. But since I was too lazy to make the wrap, I decided to mash all the potatoes and made them into potato croquettes instead. The filling is exactly the same like risoles filling (without potatoes) you can double the meat too if you like.   Ingredients: 1 kg potatoes, mashed risoles filling 1 egg 2 tbsp all purpose flour breadcrumbs   How to: Divide the potatoes into 6 to 8 equal pieces (or depending on how big you want). Form each piece into a ball, flatten it then place some filling in the middle of the potato. Carefully cover the filling with mashed potato and form into a long cylinder. Set aside. Repeat the process. Let the croquettes rest in the fridge for at least 1 hour. Prepare flour, egg and breadcrumb for coating. Take 1 potato cylinder and roll onto the flour then the egg then …

Baked Breaded Fish

Aaaahhh… Finally friday.. Thanks God! Very busy week for me. Had to stay in the school more now, because I really want to quickly finish the Swedish course *sigh*. Anyway, I’m skipping school today (bad student! :P) because I’m feeling not so well. So I thought, maybe I should take care my blog a bit extra today? Why not posting another recipe? As you can see here, just another normal and easy dinner I made for my family. The result is a very nice fish even though I baked it. And healthier for sure. Gnocchi Gratin

On busy days I like to make whatever-I-can-find-in-the-fridge stir-fry or something that I can easily put together and oven do the rest of the work (so I can do something else, while the food cooking it self :P) And this is one of them. When husband working late and I’ve had a busy day, I usually a bit stressed when it comes to dinner. I don’t like buying ready food so much (expensive and not many to choose from) and the last choice is instant noodle (most of the time). But I know it’s not good, especially for my daughter. Beef Stroganoff Pie

I’m baaaaaaaack!!! Back to my old routine now, while still waiting for my Swedish course letter πŸ˜€ So, I got a bit ofΒ hurricane for the past 2 weeks. It happened so sudden, now it stops so sudden too πŸ˜› Anyway, Ramadan is now over, so I hope I can start posting like usual again until I have to go to the Swedish course. This time I want to share another made-up recipe. This actually very quick to put together, and its great for parties or when you inviting some friends / relatives to have dinner together. Ingredients: 500g beef, diced 100g button mushrooms, sliced 2 medium size onion, sliced 2 garlic cloves, chopped 1 tsp dried rosemary 1 tbsp whole grain mustard 1 tsp ginger powder 200ml water / beef stock 150ml cream 500g mashed potato salt & pepper note: If you have fresh rosemary, use them. Salmon en Croute (My Style)

UPDATED I found Β knew this recipe when I was still working as a chef in a hotel. I love this food so much ever since. Easy, healthy, simple and most important is really nice. This can be food for people who wants to lose weight (like me :p). Ingredients: 500 grams salmon fillet 200 grams spinach 300 grams any mushrooms (I use button mushrooms) 1 sheet ready to use pie sheet (puff pastry) 1 egg 1/4 lemon Salt and pepper How to: Preheat oven to 180 C. And preheat a pan with 1 tsp butter. Wash mushrooms and spinach. After the pan is really really hot, saute spinach quickly and remove from the heat. Put it in a Β kitchen paper. Set aside. Do the same with the mushroom. Try to squeeze out almost all the liquid from both spinach and mushroom using the kitchen paper. Set aside. Spread pastry sheet on a tray, spread the spinach in the middle of the pastry, salmon on top of it, sprinkle some salt and pepper. Spread mushrooms on …

Risoles (Indonesian Croquette)

Risoles is a small croquette, shape like spring rolls with meat and vegetables filling, covered in bread crumbs and deep fried. Apparently the word risoles comes from rissoleΒ (google told me that :P). This is one of my favourite snack and also another snack that has been waiting for long time in my waiting list (I have list for snacks and sweets I want to make) πŸ˜€ Finally, I had time to make this last weekend. Can be stored in freezer too. Unfortunately my husband didn’t like it as much. But its ok, it means more for me… hahahaha πŸ˜€ So, shall we take a look at the ingredients now then? πŸ™‚ Ingredients: for 24 pieces 200 grams flour 2 eggs 50 grams melted butter / margarine 700 ml milk pinch of salt   How to: Mix all ingredients. Salmon with Mustard Mashed Potato

This is one of the day that I called lazy day. Everything is so very easy and quick. Should be able to do everything in less than 30 minutes. And you have a nice dinner πŸ™‚ Ingredients: 4 salmon fillets (125g each) 1kg potato 50g butter 3 tbsp heavy cream 1 tsp lemon juice 1 tsp whole grain mustard vegetables of your choice ready to use sauce 2 tbsp oil 1 tbsp fresh chopped parsley salt & pepper   How to: – Season salmon with salt, pepper and lemon. Set aside. – Strain you boiled potatoes. Make sure no water left or it will ruin your mashed potatoes. – With your masher, mash all the potatoes. Put it back to the pot. – Add the butter, cream, lemon, mustard, parsley, salt and pepper. Mix well. You want to get the lump-look-but-not-stick-to-the-pot-when-you-stir-it-well consistency.
